Reedy Swamp Distillery makes hand crafted spirits and liqueurs. Gin made from quality organic herbs and spices both locally sourced and home grown. Vodka from Australian wheat or sugars. Coffee Liqueur from Australian grown coffee beans even seasonal limoncello from the lemon tree next to the distillery. The garden provides many of the herbs, roots and fruits I use in our Gins and liqueurs. Commercial spirits are largely made in a fast food style industry. Fast hot fermentations with plenty of fertilisers being fed to the yeasts to achieve high alcohol concentrations as quickly as possible. They then use large scale stills and filtration processes to clean that mess up into something they can sell. At Reedy Swamp Distillery I look after my yeasts. Making them happy is my primary goal. I feed them quality food. If I wouldn’t put it my own mouth then it does not go into my fermentation vats. Cooler, slower ferments reduces yeast stress and produces cleaner flavours. The result is clean healthy fermented grains, fruits or sugars I can then run through my stills to produce a variety of clean spirits and liqueurs. Please come and taste the difference.
